This is a perfect pantry-staple spring salad that has wonderful flavors as well as awesome nutritional benefits - protein-packed with fiber and essential vitamins & minerals that tastes good to boot!
1/4 cup sun-dried tomatoes
2 tsp Dijon mustard
4 tsp honey
6 Tbsp Balsamic Vinegar
1/4 cup olive oil
1 can black-eyed peas
2 cans chickpeas
1 red bell pepper diced
1/2 cup sliced green onions
1 cup feta cheese, optional
Combine 1st 5 ingredients for vinaigrette. Add red bell peppers, green onions, and toss to mix. Add black eye peas and chick peas, and toss to mix. Add feta cheese (crumbled) and stir.
