Try this refreshing, balanced, and colorful pantry meal - healthy fats join protein & fiber to make an amazing nutritional powerhouse that tastes AWESOME!
2 tbs. vegetable oil
1/4 cup plus 2 tbs. tightly packed cilantro leaves, divided
1 jalapeno pepper; cored, seeded, and chopped
1 garlic clove, crushed
1/4 tsp salt
1/4 tsp sugar
1 can (15 oz) black beans, rinsed well and drained
1 1/2 cups halved and thinly sliced cucumber
1/2 cup diced red onion
1 avocado; pitted, peeled, and diced
1. In blender or food processor, mix the lime juice, oil, 1/4 cup cilantro, jalapeno, garlic, salt, and sugar until smooth.
2. Mix beans, cucumber, onion, and 2 tbs. cilantro leaves. Just before serving, toss with dressing, then the avocado. Can serve with shredded lettuce or a grain such as rice, farro, quinoa, etc or enjoy by itself as a light lunch!
